VASCO ALVARES
Vasco Alvares has graduated from IHM, Goa. While working at Cidade de Goa he trained in Continental and Goan cuisines. He has worked at Hotel Delmon as food manager and at Flora de Rosa, a Portuguese restaurant in Lisbon. Vasco has also worked on carnival cruise lines from 1999 – 2004. In this period he gathered knowledge of many different cuisines namely Italian, Jamaican, Mexican and French.
Currently he plans to open his new restaurant in October.
Roy Francisco Xavier Fernandes
Roy has a one year Diploma in Hotel Management and a total work experience of 13 years. He has worked as Head Saucier for Celebrity Cruises, Chef de Partie for Radisson Sas Hotel, Dubai and Commi Chef for Radisson Sas Hotel, Kuwait and as Demi Chef de Partie for Kuwait Catering Company. He specializes in International and Continental cuisines. He is presently working for Apollo Ship Chandlers (Oceania Cruises) as junior Sous Chef.
